July 6 Breakfast Rumble

Adam, aspiring young chef, and Uncle Todd, culinary master, spent some quality time in the kitchen together during the holiday weekend. Here is the impromtu brunch dish they created together:



1 large onion diced and sauteed in 2 Tablespoons butter
add 4 eggs and scramble together unti lightly browned. Set aside. Meanwhile, in a very large skillet, brown 1 large cubed sweet potato in 2 Tablespoons butter with 1 tsp salt, 1/2 tsp freshly ground pepper, and 1 Tablespoon soy sauce. Add 1/2 cup cheese cubes. Stir in 1 cup fresh spinach leaves and cook only until slightly wilted. Now, layer in the pan all ingredients starting with the potato/spinach mixture, followed by the egg and onion mixture, top with 2 cups of cottage chees and another bit of soy sauce to taste. Cover and steam on low heat for 5 minutes. Serve with fresh strawberries on the side. Here is how it looks to cook & serve:
